What a great weekend back in F'ville. Time well spent with friends. However...we did go to perhaps the saddest SpringFest I ever attended. Rainy and cold kept people away. Still, it's a great tradition to head out to SpringFest and watch Desert Fire dance at the Walton Arts Center.
Special thanks to Kathleen and Collin for providing a roof and bed during our stay. Peter and Beth hosted a very tasty Cinco de Mayo event. I must have those tamales again. So very good.

Hey, Pete's Chicken Mole Tamales recipe:
Bake about 5 or 6 chicken tenders. Maybe 2 or 3 whole breasts. Seasoned as you will, with whatever mexican type seasonings you want to use, like cumin, paprika, pepper, salt, etc. Then take the baked chicken, and chop into little pieces. Add to a pot with about 2 cups of water and two tablespoons of mole sauce. It's everywhere. You can find the stuff at Wal-Mart. Cook until the sauce thickens.
Then make the masa dough. Take 2 cups of masa flour and about 2 and a half cups of water, and make a dough.
Spoon out the dough onto wet corn husks. Then add the chicken mole. Then wrap it up.
Steam them in a bamboo steamer, then let them cool. Reheat to serve.
Rain is very much a part of the tradition, but it usually subsides at some point. It never really did this time.
Also, I really think that the Fayetteville government is really screwing up this whole thing. They've got a friggin' FESTIVAl here, that could really be turned into an event, you know. But they seem to be letting it die. It's sad. Some of my fondest memories of Fayetteville are of Springfest.
